I must confess: I am not a fan of the Biggest Loser. I think the show promotes an unrealistic and unhealthy – even dangerous – approach to weight loss.
However there is one recipe I picked up during the first season, which I still use today: Adro’s Chicken Parma, a delicious low-fat version of chicken parmigiana. (Adro was the bald-headed guy who later went on to win the first series).
It’s been a while since I cooked it, and as it was one of those recipes I kept “in my head” rather than written down (that’s how easy it is!), I thought I’d better Google it to make sure I was doing it right. But I couldn’t find it anywhere!
I was forced to rely on my memory (scary!) – fortunately it turned out okay, so I thought I owed it to the world to make sure that the recipe for this simple, tasty, healthy version is still available. You’re welcome .
Adro’s Chicken Parma
Ingredients
- Chicken fillets (I think the original recipe called for breasts but we prefer thighs; I think breast fillets are lower in fat but the choice is entirely up to you).
- 1 jar salsa sauce
- thinly sliced (low-fat) cheese
Method
- Cover an oven tray with baking paper, and place chicken fillets evenly across the top of the tray.
- Spoon a dollop of salsa sauce on each fillet – DO NOT ALLOW SPOON TO TOUCH CHICKEN – as this will contaminate the remainder of the jar (you most likely won’t need the whole jar so you may as well keep it!).
- Spread sauce over chicken with spoon.
- Top each fillet with a thin slice of cheese or two (to cover).
- Bake in a moderate oven until cooked – about 45 minutes.
It must have been a while since I last made it, because neither of my kids could remember eating it before – but they both gave it the thumbs up!
As I am not a food stylist, the finished product doesn’t look particularly appetising in my photo, but trust me, it’s yummy!

I make something similar, for us adults I use ham, Salsa and mexican cheese and the kids I just use tomato or bbq sauce, ham and normal cheese. I love this in winter and it gives a normal meal a twist.

As soon as you said Biggest Loser I knew who you were talking about LOL. I prefer thighs as well, they are much nicer in my opinion. I might have to try these out as they sound super simple. Also did you know that you can get parma specific sauce now? At Coles it’s in the section where the chicken tonight and Asian sauces are.

I remember Adro, I admit I haven’t really watched it since the season he was on. I am a sucker for a good chicken parma. Whenever I go back home (country Victoria) I always have to go to the pub for a good chicken parmieβ¦ They love it there, you can even buy them in the drive through at the pub’s bottle-o!
